pancake mix:

take a mug fill it to the brim with flour.

empty into mixing bowl.

fill the mug back up with eggs.

empty into the flour and beat to a smooth paste.

fill the mug back up with milk

gradually mix this into the flour and eggs.

Congratulations you have made pancake mix.


Which by the way when poured into hot oil in a muffin tin and baked at 185-200 degrees ( depending on oven) produces Yorkshire puddings.

big fluffy ones. It's best to blend the mixture in a food processor or with a hand blender to remove any lumps.

Buttermilk pancakes FTMFW!!!!!!!!

Ingredients.
Serves: 4
125g plain flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
1 egg
250ml buttermilk
50g butter, melted

Preparation.
Prep: 5 mins | Cook: 15 mins
1. Preheat and lightly grease a large frying pan.
2. Mix the flour, salt and bicarb together in a bowl. Add the egg, buttermilk and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy and puffy.
3. Drop 5 tablespoons (75ml) of the batter onto the pan, spreading lightly with the bottom of the spoon. Cook until lightly-browned on each side, 1 to 2 minutes per side.

Tried this the other day and will be doing these for tomorrow. Jamie Oliver recipe for fat fluffy US style pancakes, pretty easy and worked really well.

3 large free-range eggs
115 g plain flour
1 heaped teaspoon baking powder
140 ml milk
1 pinch salt

Separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Gently fold into the batter – it is now ready to use.

Heat a good non-stick pan on a medium heat. Pour some of your batter into the pan and fry for a couple of minutes until it starts to look golden and firm. Loosen with a spatula and flip the pancake over. Continue frying until both sides are golden.

Kids nommed them with nutella and sliced banana. I had bacon and maple syrup. :yum:
